My kids eat pancakes, maybe your kids eat pancakes too. This week I am going to try these japanese “okonomiyaki” inspired, vegetable pancakes from Smitten Kitchen. Deb describes the way they looks as a bit like “a flying spaghetti monster that ran afoul of a hot skillet and crisped up on impact in all of its straggly glory” but I am sure you agree that they look pretty tasty and the crispiness will only help entice the kids. Cabbage, carrots and kale are the main ingredients, covered in a delicious sauce and sprinkled with green onions (spring onions, scallions!). If I feel compelled, I may whip up the accompanying sauce, or find some kind of Japanese bbq style sauce in the Japanese section of the supermarket.
